
I’m always on the hunt for a clean treat, and the more FREE containing words the better (Gluten FREE, dairy FREE, refined sugar FREE). So with a little trial and error, and my housemate’s approval, I think it’s only fitting with summer just around the corner, to share this beautiful, extremely delish clean raspberry slice recipe with you.
It’s easy to make, contains readily sourced all-natural ingredients, and best of all, it packs a punch when it comes to health benefits! Jam-packed full of raspberries, nuts and dates, we’re snacking on a smorgasbord of antioxidants, vitamins, healthy fats, natural sugars and dietary fibre.
INGREDIENTS (BASE)
1 C almonds
1 C walnuts (please note you can substitute in other nuts if almonds and walnuts aren’t your flavour)
2 Doz fresh medjool dates
1/2 C shredded coconut
INGREDIENTS (FILLING)
4 C cashew nuts (soaked in cold water for 6 hours, or if you don’t have time to wait, soak in boiling water for 2 hours)
1 C maple syrup
1/2 C coconut oil
2 tsp vanilla
2 C raspberries (fresh is best, but frozen can substitute)
METHOD
- Blend all base ingredients together in a food processor, you’ll find it starts to stick together due to the date content.
- Press into the base of a lined baking tray.
- Place all filling ingredients together in a high-speed blender and mix well.
- Pour over the base and place in the freezer to set.
If you’re only making the raspberry slice for yourself, simply divide the ingredients listed in half to make a smaller batch. If you feel like making the slice a little more aesthetically pretty, sprinkle some shredded coconut, or crushed nuts over the top. Remember to keep the slice in the fridge for optimal freshness.
